The day to day running of a castle was in the hands of a steward who looked after accounts also especially when the lord was away.
Staircases were usually built in the corners to save space and were therefore spiral. Some say that there was always a step which was different and that this was to trick an attacker. It is more likely that this was just a result of less than accurate cutting of the stone.
